It’s a fun way to showcase the fresh summer peach, juicy fruit with 10 different vitamins and a bomb of savouring flavours. We turned that flavours into a dish, for your enjoyment. So want to beat the heat rush with semifreddo which is like ice cream, but its texture is closer to frozen mousse.
Peach Semifreddo with Pistachios and Peach Swirl

1⁄2 cup Chopped Pistachio Nuts
1 pound Ripe Yet Firm Peaches (Cut Into Chunks)
1⁄4 cup Sugar*
2 tbsp Lime Juice
1 8-ounce Container Frozen Light Whipped Dessert Topping0 (Thawed)
1⁄4 tsp Almond Extract
3 Ripe Yet Firm Peaches (Cut into 10 slices each)
2 tbsp Honey
1. Line a 9×5×3-inch loaf pan with a double layer of plastic wrap, leaving a 2-inch overhang on all sides. Spread 1⁄4 cup of the chopped pistachios evenly across the bottom of the pan over the plastic wrap.
2. In a food processor combine peach chunks, 2 tablespoons of the sugar, lime juice, and a pinch salt. Cover and process until pureed; set aside. In a heatproof bowl combine eggs and remaining 2 tablespoons sugar. Beat with an electric mixer on medium speed until combined. Place bowl over a saucepan filled with gently boiling water (the bowl should not touch the water). Cook, beating constantly on medium speed until an instant-read thermometer inserted in centre of mixture registers 60°C and maintains that temperature for 3 1⁄2 minutes (10 to 12 minutes total) or reaches 70°C. Remove from heat; continue beating off the heat until cooled to room temperature (for about 5 minutes).
3. In a large bowl combine whipped topping and almond extract. Fold cooled egg mixture, peach puree, and remaining 1⁄4 cup pistachios into whipped topping mixture, leaving swirls. Pour into prepared loaf pan; smooth top. Cover with plastic wrap; freeze for 6 to 24 hours or until firm.
4. To serve, remove semifreddo from the freezer and let stand for 10 to 15 minutes to soften slightly. Toss peach slices with honey. Remove semifreddo from pan by pulling up on plastic wrap, then invert onto a cutting board and peel off the plastic. Cut into 3⁄4-inch-thick slices and transfer to plates. Top with peach slices and serve immediately. If desired, garnish with fresh mint sprigs.
