Shrimp fried rice

(With Brown Rice)

The recipe is prepared with brown rice which is considered good for digestion and is high on nutrients like protein, thiamine and minerals. People with diabetes or who are trying to lose weight can benefit from brown rice due to its low glycaemic index. Cooked with olive oil and a lot of vegetables, this dish also provides good amount of fibre. Moreover shrimp contributes to increase the overall protein content and is believed to contain anti-oxidants and minerals.

 

INGREDIENTS

  • Brown basmati rice - 2 cups
  • Extra virgin olive oil - 2 tbs
  • Chopped French beans - 2 cups
  • Chopped zucchini - 2 cups
  • Sliced mushrooms  (optional) - 2 cups
  • Chopped onions - 1 cup
  • Snap peas - About 20
  • Soy sauce - 2 tbs
  • Cooked shrimp - 150 g

 

5 STEPS TO AN APPETIZING MEAL

  • Heat the olive oil in a skillet on medium heat and add vegetables.
  • Sauté for about 5 min. Add the shrimp and sprinkle salt as per your requirement.
  • Sauté for another 5 min or so and then add cooked brown rice.
  • Garnish with exotic vegetables of your choice.
  • Serve hot.
